Q GradingProtocol
Q-Grading · Q Grading
The systematic sensory evaluation and calibration process conducted by certified professionals known as Q Graders. Developed by the Coffee Quality Institute (CQI) and integrated into modern Specialty Coffee Association (SCA) standards, this protocol assesses coffee across multiple attributes. Through the evolution of the Coffee Value Assessment (CVA) framework, Q Grading has shifted away from traditional single-number thresholds, moving instead toward a multi-dimensional approach that decouples objective sensory descriptions from affective quality judgments.
QuakerRoasting
Quaker · Soluk
A defective coffee bean that fails to roast properly, remaining significantly lighter or pale-colored compared to the surrounding roasted batch. Quakers are caused by underripe cherries, improper harvesting, or a lack of internal sugars and starches, which prevents the Maillard reaction and caramelization from occurring during roasting. They impart an unpleasant papery, peanutty, or cardboard flavor to the cup and are considered a major quality defect in specialty coffee.
