Underextracted: A brewing defect that occurs when insufficient soluble compounds are extracted from the coffee grounds into the water. This typically results from a grind size that is too coarse, a brewing time that is too short, water temperature that is too low, or an incorrect coffee-to-water ratio. The resulting cup profile is characteristically sour, salty, and grassy, lacking sweetness and balance while leaving a thin, watery mouthfeel.
