Rancid

Rancid: A severe sensory defect describing the sharp, unpleasant chemical odor and taste of spoiled, oxidized lipids in stale or improperly stored coffee beans. In professional coffee cupping, this term is strictly reserved for genuine lipid deterioration and must not be used loosely to describe other strong or heavy aromas unless clear signs of physical and chemical degradation are present.
