Papery: A sensory taint or defect characterized by an undesirable aroma and flavor reminiscent of brown paper or cardboard. This defect typically occurs either when coffee beans are improperly stored in paper sacks that transfer their odor, or during the brewing process when using low-quality, unbleached, or unrinsed paper filters.
