Caramelly: A sensory descriptor in coffee used to identify sweet, confectionery-like flavor and aroma notes, resulting from the Maillard reaction and the subsequent caramelization of sugars during the roasting process. When carefully developed without reaching the point of carbonization (burning), these notes provide a characteristic sweetness and richness to the cup.
