Pull: A traditional industry term for extracting a shot of espresso. The expression is a historical holdover from the era of manual lever-operated espresso machines, where the barista physically pulled down a lever to compress a spring and drive water through the coffee bed. Today, the term is widely used in cafe culture to describe the preparation and extraction of any espresso shot, regardless of whether the machine is manual, semi-automatic, or fully automatic.
