Oniony: A sensory tasting term describing an undesirable flavor or aroma reminiscent of onions. In coffee cupping, it is strictly classified as a taint or defect. It is most commonly associated with errors during the wet processing method, specifically over-fermentation or the use of stagnant, contaminated water in the fermentation tanks or washing channels.
