Celebes: Historically, the name given to the Indonesian island of Sulawesi by Portuguese explorers; the etymology remains debated but is widely recognized as a colonial-era designation. In the specialty coffee industry, "Celebes" is often used interchangeably with Sulawesi as a geographic designation. The most renowned coffees from this region are cultivated in the Toraja and Kalossi growing areas in the southeastern highlands, typically processed using the giling basah (wet-hulled) method, resulting in a full-bodied, low-acidity profile with deep, earthy, and spicy notes.
