Chicory
Chicory: The roasted and ground root of the chicory plant (Cichorium intybus), commonly used as a coffee additive or substitute. In coffee culture, particularly in the New Orleans style, it is blended with coffee to impart a woody, nutty, and slightly bitter profile, which helps to mellow the acidity of dark-roasted beans and extend the coffee supply.
